As most of you probably already know...Pete has been working in
Starkville the last few months (3 hours away). So, I thought I would make him something sweet to enjoy during the week while he's working. I saw a really cool rainbow cake on
Whisk-Kid's blog and thought it would be neat to translate into a cupcake (because I'm obsessed). I've seen many rainbow cupcakes that are swirled but I thought it would be a nice surprise to layer them in the cupcake liner. The goal was to have 3 layers of cake separated by icing and then icing on top of course. Obviously it didn't turn out quite like I imagined, but atleast they taste really good. I let Pete pick out the colors (which remind me of Nickelodeon). I call them "Inside Out Cupcakes."
